Last night's dinner

I like to go to AllRecipes and use their "ingredient search" when planning our menu (providing our cupboards aren't too bare). It is amazing what you can come up with to make, mostly with what you already have on hand.

Here are the recipes I made for our dinner last night (from AllRecipes):

Chicken Stuff

1 (4 pound) whole chicken
1 (7 ounce) package corn muffin mix
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of celery soup
salt and pepper to taste

1. In an 8x8 pan (NOT muffin tins), prepare muffin mix according to package directions.

2. Preheat oven to 350 degrees F (175 degrees C).

3. In a large bowl, combine shredded chicken, cream of chicken soup, cream of celery soup, salt and pepper and mix well. Pour mixture into a lightly greased 9x13 inch baking dish and crumble baked muffin mix on top.

4. Bake at 350 degrees F (175 degrees C) for 30 minutes or until bubbly.

Chocolate Cheesecake

1 (9 inch) graham cracker crust
2 (8 ounce) packages cream cheese
2 cups semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
2 eggs
1 teaspoon vanilla extract

1. Preheat oven to 325 degrees F (165 degrees C). Melt chocolate chips in a double boiler or in the microwave, stirring occasionally until smooth. set aside.

2. In a medium bowl, mix the cream cheese until smooth and creamy. Gradually add the sweetened condensed milk, then beat in the eggs and vanilla. Finally, stir in the melted chocolate. Pour into the prepared crust.

3. Bake for 1 hour in the preheated oven, until the center is set. Allow cheesecake to cool to room temperature, then refrigerate at least 4 hours before serving.

It's funny how prices must vary from the US to the UK. That meal would count as a company meal that I might serve to guests or on a Sunday or a special day. It wouldn't be a frugal supper for us with our prices :o) We should move to the States, I think :o)

Wow, .29 cents a can is a really good price! The cheapest I can get them is .50 cents. It does sound like a yummy meal though. And, if I made the cornbread from scratch I could save some in that area. Chocolate chips are almost a dollar more expensive here, too! On the other hand, some things are probably cheaper here then in KS, so I suppose it evens it all out. ;)

Those are Aldi's prices. Do you have an Aldi store? I usually plan the recipes around what I know I can get for inexpensive... so find what's inexpensive in your area and cook with that. :)

I missed the frugal meals send in, but the chicken reminded me of a favorite cheap meal for us. Around here when whole chickens go on sale for about .59 a pound get the biggest one they sell about 5 or 6 pounds. First meal- Roast the chicken in the oven or crockpot sprinkles with garlic, rubbed with a bit of oil
and seasoning salt, serve with rice and salad or whatever you like. Potatoes are cheap too, usually! Then debone the chicken. Simmer bones with juice from roasting pan and water, some extra salt and garlic. Meal 2 Chicken soup, or chicken and dumplings, or chicken gravy over biscuits
If your family is small like ours is, we can get three meals out of a chicken. We still have quite a bit of deboned chicken, I can make chicken salad sandwiches, chicken pasta salad, ceaser salad, or quesadillas or freeze it for later or whatever you like to use cooked chicken in. You can even freeze the broth for later!
