From my kitchen...

There's nothing quite like homemade apple dumplings and cinnamon icecream... De-li-cious!

I've been feeling very domestic today and spent almost two hours cooking and baking this afternoon. My husband was delighted, of course, especially with the dessert.

I wish I had a picture to post, but the dumplings were eaten before I had a chance to snag the camera and photograph them. Maybe next time.

What's cooking at your house? Kathrynne and I made Cream of Broccoli soup and a double batch of Banana Chocolate Chip Muffins (sound like a bizarre combination? It's one of my husband's favorites and they are quick to make and freeze well, too. He enjoys having them in his lunches everyday.), in addition to our scrumptious dessert.

Oh, and Pants_that_Fit mentioned about making meals for a $1 per person. What meals do you serve at your house that qualify for this? Suggestions?

We are going to make savoury mince beef with carrots and other veg mixed in with boiled potatoes, cabbage and green leafy veg. We are trying to use things from the garden.

During the fall you can always find me baking away. Starting in October I make several batches of Pumpkin Butter and Pecan Pie Mini Muffins to sell at my husbands work and to give away to friends/family.

This week I've made the most amazing chicken soup. My MIL came over yesterday and I served her some soup for lunch, my husband was mad because he wanted it all for himself!

This year I plan on trying to make the Irish Potato Candy that my grandmother used to make every Christmas. I do not have her recipe so it will be a challenge.

We had a party last night so I was in the kitchen almost all day. We made homemade onion rings, pizza pockets and pickleo's, muddy buddies, toffee, pumpkin cream cheese cake, and Fall punch. It was quite a party! :) However, I'm glad we don't consume that much junk on a regular basis. Ick! :)

I'm fixing to put some chicken on to boil for white lasagne tonight. I love to bake/cook when it's nice and cool outside.

We had white bean soup with bacon, along with cornbread for supper. This cost only $1.75 for the 5 of us and we had leftovers. Not figuring in the value of the leftovers this only cost 35 cents per serving. And everyone was very satisfied.

Later we had butterscotch brownies that the kids and I put together during our lunch break.

I love the food topics!

I make bannana bread with chocolate chips which is probably similar to your muffins. I have also been baking a lot becauses it warms up my kitchen.

I do make my own chicken soup that uses leeks and green onions to make the broth. I got the recipe from an elderly dutchman that I knew when I was a kid. It will last for days.

We are having crockpot pepper steak with rice and broccoli. We will also have applesauce and Butterscotch blondies for dessert.

I have not made anything yet today, but am planning on baking today too! Yum, your food sounds good!
I am going to make a cherry coffee braid, and maybe a batch of muffins. I would like to make some vegetable soup or stew for supper with rolls to go with it or garlic bread.
But first I have to get school done so we'll see!

Oh, 1.00 meals for one person?
My favorite cheap meals that cost almost nothing are pasta and sauce, Spanish rice with some chicken bits in it bean and cheese burritoes ( I make my own refried beans),
I can make a big pot of spaghetti sauce for a few dollars, then I freeze it, and take out when I need it. This is something we did growing up so we always had spaghetti sauce!

... I have to admit that I have spent the entire evening last and morning reading The Politics of Jesus by John Howard Yoder- an amazing, Scriptural theology which I highly recommend. Will have to throw a sandwich together for lunch, but it's worth it!

Making spaghetti with homemade sauce is very inexpensive. The total cost when I make spaghetti is no more than $3 and that feeds 8 people. I also serve with a simple salad or greenbeans. I don't always serve it with bread.

Tonight we're having chili and cornbread. Another simple meal that doesn't cost me more than approximately $4-5 to make for our whole family.

The cheapest meal would be Ramen Noodle soup, but they aren't very healthy. However, I could feed us for a grand total of 80 cents. I'm also NOT a big fan of them. But now and then I don't have a problem with them.

Today I'm making some home-made pizza, from the dough to the sauce! Very, very cheap, and it freezes well. :)

Zan-- is that soup by any chance called "waterzooi?" It sounds like it... that's one of my favorite dutch meals.

Banana Chocolate Chip Muffins are some of our favorites--they're such great way to use up ripe bananas, and yes, they do freeze well--I put them in individual plastic bags inside a freezer bag and take down a few the night before for breakfast.

Alice, we LOVE homemade pizza! So much better than carry-out, in my opinion and it really is farily easy to make too, and not expensive at all! I usually don't make my own sauce, though.

Ah, pizza is "my" meal, the meal I made when it was my turn to cook each week as a kid (somehow I got lucky and drew Friday night, so pizza was perfect). I'd make the dough, and everyone could have their own mini-pizza with their own toppings, or share a larger one. All in all, I've had 15+ years to perfect my recipes for doughs and many different sauces. :) If I have time this week, I'll post my favorites.

I love it. I grind wheat berries and use the flour for this recipe. I don't know how it is with ww flour that you buy at the store.

I ended up making 2 coffee braids, one cherry and the other apple, apple crisp and a pan of rolls with garlic and parmasan on them.
I need to see if I can make some soup for dinner now!

I have a good pizza crust recipe that can be made mostly whole wheat.

Heather-- I'm wondering about the texture of the crust you use. It seems that making a stiff dough and not allowing it to rise would make the crust "heavy." Does it? Otherwise, it's fairly close to my recipe. :)

Pants that fit:
I roll it out thin, so I don't find that it is heavy. But I bet if you made a thicker crust it would be a bit heavier. But it is so yummy! ;o)

Nope, Pants. He didn't call it that. He just called it chicken soup.

I have just substituted wheat flour for white flour for my pizza crust. It is OK.

In my opinion, when I eat junk food I eat junk food and when I eat healthy food I eat healthy food and rarely mix the two. My aunt makes healthy pizza with wheat and broccoli and other veggies. It is OK but if I eat pizza I want it to taste like pizza and not a salad on wheat bread. Do you guys, who use wheat, put anything else on it that might hide the wheat taste. Don't get me wrong I love wheat bread just not on pizza.

When I make a pizza crust I usually make it white. When you add wheat, I do not make it all whole wheat.
Mine is pretty simple:
3/4 c. of hot water per medium pizza crust
a little under a T of instant yeast
flour and a bit of salt
I mix the water and yeast add the salt and flour to form a dough that is just barely not sticky and knead until smooth. Pour a T of oil over it and let rise. Form pizza crust. When I make more than one I do not double the yeast like everything else, for 2 I do a bit more than a T, then 2 T for 3, 2 heaping for 4 etc.
