Ever since I said...

Ever since I said I wasn't probably going to be blogging that much, I've been blogging more than ever. Funny how that works! I've been spending a lot more time with my family and yet, I've seemed to have more time to blog.

Kathrynne and I are off to make soup, bread, and salad for dinner and tackle some more laundry and ironing. What's cooking at your house?

We had parmesan ham pasta for dinner with mixed vegetables and beets for a side dish! - It turned out pretty and 'just right', but no one except mama really cared for ham in it. :)

Soup sounds good though! It's chilly and gray here today.

Polish sausage and macaroni and cheese. Later tonight will be birthday cake for our lil' punkin who turned two today.

Potroast and carrots in the crockpot (YEAH for crockpot liners), mashed potatoes, and bread from the bread machine. Even my 6 month old ate a good dinner tonight (no, he did NOT get potroast; he had to be content with carrots, potatoes and fresh bread).

Homemade spaghetti sauce with whole wheat noodles, salad, "Crystal's" :) whole wheat rolls, and low-fat chocolate pudding pie for dessert.
Excellent meal. :)

We had a salad with baby spinach, mandarin oranges and blanched almond slivers and homemade olive oil dressing, buttered egg noodles, steamed broccoli and sole stuffed with crab(the last item was a frozen item). My husband said the meal was 'WONDERFUL'! (o:

We do "meatless monday" at our house so we had grilled eggplant, garlic mashed potatoes, and wedge salad with ceasar dressing. I have a thing for ceasar dressing!

I've noticed a lot of people make their own bread and it's something I've always wanted to try. I may have to take the plunge and get a machine. :0)

We had burritos with shredded beef, homemade refried beans and cheese in tortillas for supper. I baked some muffins early this morning first thing! It was fun to get up and make something early! They had yogurt in them and some I put some jam on top and others had dried cranberries with almond flavor.

Wow! You all are making me hungry.

We had Turkey Cabbage Stew and Southern Cornbread for dinner. The salad didn't get made in time because Kathrynne had a mishap and I had to take care of her and that was the end of the salad making. Oh well, at least I had good intentions!

I fixed Lentil Soup and added cooked Lean Hamburger meat.
I also made a French Baked Fruit Desert.

Three cheese chicken enchiladas and the corn tortillas I have to make from scratch. We are serving in India and have to make most things from scratch. It turned out so delicious! Worth the time.

Ditto the "meatless" Monday. :-)

We had Mushroom Vegetable Strata with Lemony Cucumber Salad, Cinnamon-Raisin Bread, and sliced pears.

I love Stratas because you make them the night before, so all you have to do is pop them in the oven!

For the three-cheese chicken enchiladas the recipe is from stephskitchen.com(I love her site)
I used the green sauce and left out cumin, pepper and salt. Also we can't get the cream cheese here in India.

I'm sure you can buy them already made but it's fun to see that you can make them.

Jenna,

You don't need a bread machine to make bread! It's very easy once you get the hang of it. Any good cookbook will have a recipie, or you can look online.

But if decide you want a machine, try Goodwill and Salvation army. I frequently see several at a time. If they do not have an instruction manuel, you can get one here:
