World's easiest chicken roll-ups
For those of you who asked for the recipe for the Southwest Chicken Roll-Ups, here you go:2 Tbsp. salsa
1 (16 oz.) can refried beans
1 cup chicken, cooked and cubed (I usually use one chicken breast.)
1 cup cheddar cheese, shredded
10-12 flour tortillas
Stir together first three ingredients. Spoon bean mixture onto middle of tortillas. Roll up tortillas and place seam side down in 9x13-inch pan. Bake at 350° for 20-30 minutes. Sprinkle with cheese. Serve with salsa and sour cream, if desired. Serves 4-6. Freezes well.
When I buy chicken breasts, I usually cook, chop, and freeze them into one-cup portions ahead of time. This makes meals like this a snap to put together. This is such an easy and delicious recipe (at least according to our tastebuds!) and it's very inexpensive, too. If you make your own refried beans, salsa, and/or tortillas, it would be even less expensive and better for you. But don't feel like you have to be so ambitious!

Yummy. We made something like this last night for a Superbowl party we went to. But, we cut the tortillas in traingles to make them bite sized.
It looks delicious and it sounds easy to make; it is surely the best of both worlds. I also cut up my chicken for the week. (except I use a bag of chicken breasts) Have a blessed day in Him! I hope your pregnancy is going well! I feel my sweet baby kicking all the time now!

Does anyone have a recipe for making your own refried beans? That sounds really good but I have never heard of making your own!

I make my own refried beans all the time. Growing up we used to only used canned until we got this recipe and they taste so good, it is hard for me to use canned anymore!
I make mine in the pressure cooker as that makes it so much faster and easier to get the beans done, but you can do them the other way. I will post the details on my blog if you are interested.
