Eat mor chikin

Kathrynne has decided that chicken is her preferred food of choice. Not chicken fingers, mind you, but cooked and diced chicken - the kind I have on hand in one-cup servings in the freezer to use in casseroles, soups, and so forth. It's a good thing it's in the freezer otherwise the girl would have eaten it all up. I'm not kidding, I think she could eat two cups of the stuff in one setting if I'd let her. She'll choose chicken over chocolate anyday and for those who know my daughter, that is saying a lot. She wants chicken for breakfast, lunch, snack, and dinner. Of course, I don't let her only eat chicken, but she has been having it at least twice a day. At this rate, though, maybe I'm going to have to up our $35/week grocery budget just to be able to afford enough chicken... :)

Speaking of chicken, we made this yummy dish for dinner tonight. Only, we used - you guessed it - chicken instead of beef. I made it for the first time last week and it was a hit so I decided to make another batch this week. I omitted the green peppers and added garlic salt and it is delicious. Quick, inexpensive, healthful (especially when made with brown rice), and we all love it.

That's quite comical. I'm a big fan of chicken, it is my main source of protein because our Creator "blessed" me with a serve allergy to all beef products and I mean ALL (broth & stock, bullion, the meat itself, beef flavoring you get the Idea. I use blessed lightly because when I see how much "junk" they are putting red meat now days I'm thankful to not put that into my body) and while I will eat pork here and there, chicken remains my more common meat. it has to be I suppose, hahaha! At least you know she's receiving enough natural protein! but over chocolate? goodness no!

That's too funny! I wonder if it's an age thing--my almost two year old has been clamoring for chicken too. Although, I'm lucky because he thinks any kind of meat is "chicken". :)

Yesterday he chased a robin across the park shouting "Chicken, Chicken! Wait! Eat!".

Oh yes! This reminds me of when I was at your house a few weeks ago and cooked up all that chicken one morning. I left it cooling in the refrigerator...or so I thought! When I came back into the kitchen several minutes later, Kathrynne had the whole BIG bowl of it, and was sitting on the floor having a great meal!! I was like, "Kathrynne, what are you doing??! I need that for dinner!!!" I took it away but she got right back into the fridge and started eating more! The rest of the day she was asking me, "Eat mor chikin?" :)

Anyhow, this post just reminded me that I don't think you ever heard that story as that was the day you were filming. :)

Ahh - nieces! They're SO much fun!

My 22 month old asks for chicken for breakfast all of the time! When I tell her, "Not for breakfast Sweetie.", she says, "I need choc'ate...". :).

My 2yo asks for chicken constantly too. It must be an age-related craving or something!

My son absolutely loves chicken nuggets...I only buy the kind made with all white meat (and do not fry them), but I would still prefer that he eat plain chicken with no breading. Considering that this is basically all the meat he will eat, I guess it's ok since he needs some protein in his diet. I'm going to stock up on chicken the next time it goes on sale and try your idea of freezing one cup portions. How handy for quick recipes---like the yummy looking one you posted! That's going on my list of things to make for next week's meals.

I am with Kathrynne. I love chicken! At least it is healthy and low in fat.

I don't think I could ever be a vegetarian with how much I enjoy chicken. I could easily do without beef and definitely without pork, but never chicken. (Well, I shouldn't say "never.")
