If you live near a Kroger, this week they have quite a few deals going on. And Finally, a Question on Cabbage
I noticed that most of the stores have green cabbage on sale for $0.19/lb or so (for St. Patrick's Day). I'd like to get at least a few heads of cabbage since that's quite a bit cheaper than I can normally get it. However, I don't have but maybe one or two good and healthful cabbage recipes. Anyone have any suggestions?

You can add cabbage to hearty soups, steam it and serve with lashings of butter and pepper, you can make colslaw, sourkraut (if you like it) make a savoury mince (we call ground beef 'mince' over here) so basically, take ground beef, add chopped carrot, corn, peas, cabbage, potato... whatever really, some curry powder and beef stock and then serve on toast. It's yummy. Cabbage leaves are also great for putting on sore, milk swollen breasts as you wait for your milk to come down, and that's all I can think of right now.
I just did my post for frugal friday on some of my favorite cabbage recipes! Check out my link in the Frugal Friday links!
We LOVE cabbage around here.
We make a basic boiled cabbage with water, apple juice, or apple cider. as a side dish.
I crockpot it with pork chops or pork roast. It pairs well with pork, apples, or potatoes; seasoned tomato sauce (NOT spaghetti sauce) works well too. If you crock it, it will burn to the side of the crockpot if it is not in liquid (I put the cabbage in first and then the meat on top).
We make stuffed cabbage (use a recipe for stuffed peppers or meatloaf (add rice), but wrap in cabbage leaves, or I'm lazy, so I just chop it coarsely and layer meat cooked with onions, tomato sauce, and cabbage to make a casserole. Cook covered - the cabbage will dry out and get crispy otherwise.
If you have meatballs, serve them on a bed of steamed cabbage with tomato sauce cooked with garlic and onion.
I also chop it and boil/steam with cut up potatoes and kielbasa. (Classic Polish food)
Aside from Corned Beef and Cabbage (which I always make in my crockpot), a classic Irish dish is Colcannon. Big hunks of bacon, cooked with onions, add diced potatoes and chopped cabbage. SOOO good (but not the "healthful" recipe you requested! LOL)
You can make Kimchi if you like asian food, or saurkraut at home easily (takes a few days though). It also goes very well in stir fries (bok choy is a form of cabbage, and you can substitute).
Here's a kimchee recipe I'm going to try (but haven't tested myself yet): http://altmedicine.about.com/od/healthykitchenrecipes/r/kimchi_recipe.htm
Of course, coleslaw, make your own dressing with mayo, vinegar (I like rice wine vinegar), and onion powder. I don't have a recipe, I just mix it until I like the taste! Super easy. I put broccoli stems and carrot shreds in too.
It's good as a coleslaw with asian sesame dressing too.
It takes about 20-30 minutes to cook cabbage in liquid on a stovetop.
Mama Says
Sauerkraut! Nourishing Traditions has a recipe for fermented cabbage using whey. Fermented veggies are so good for you and it only gets better with age.
Hi Crystal,
A friend gave me a great recipe using a whole head of cabbage and smoked or polish sausage. It is very mild, inexpensive and tasty! I was planning to make a batch of it this week because cabbage is so cheap this time of year.
The link to it is here:http://hubpages.com/_1d3ktfeh64vs/hub/Budget_Cabbage_Dinner
I also did a post tonight on all kinds of good recipes, inviting readers to post some of their family favorites.
Take Care,
Trixie
I have Kroger now, so I can take advantage of these deals!!! Can you tell that I'm excited. I didn't realize that they "double" larger coupons up to a $1 amount. That's good to know.
Chrystal ,
I have a great recipe for
Stuffed Cabbage Soup. If you do not have the recipe, let me know and I'll post it for you! (I check your site daily! : )
You can boil the cabbage until it is crisp tender (blanch it), allow it to cool, and place the drained cabbage into ziploc bags and freeze. Add to soups and stews.
You can add cabbage to salads or make coleslaw.
Ruth, from PA
I found this recipe in a book sometime ago. Finely slice cabbage (like for cole-slaw) I use about 1/2 small head for the two of us since it keeps. Mix with about a tablespoon of olive oil. Sprinkle with some dill and feta cheese. I usually add a little cider vinegar. Salt and Pepper to taste. This is much lighter than traditional cole-slaw and tastes great too!! Sometimes I make it with blue cheese instead. Joy
Cabbage is really nice steamed in the microwave. Just chop, sprinkle over the juice of half a lemon, add a knob of butter and cook for 2-4 minutes. You want the cabbage to still be crunchy. Add pepper to taste.
We often add cabbage to stirfrys and there is coleslaw of course.
My favourite two coleslaw recipes are finely chopped cabbage, grated carrot and grated cheese (that's it, no dressing, it is yummy with pasta or baked potatoes). The other recipe is finely chopped cabbage, grated carrot, a chopped peeled orange, a chopped (with skin on) apple, finely chopped red and green pepper if desired and 1 small can of chopped or crushed pineapple with juice (the juice is the dressing).
I don't like most traditional uses for cabbage but I invented a good (and frugal!) vegetarian soup when *someone* accidentally bought it instead of lettuce...
Cook 1 1/2 cups of lentils in 8 cups vegetable broth until soft (20 minutes or so). In a very large skillet, saute shredded cabbage (2/3 large or 1 medium) and 1 chopped onion with a little olive oil until wilted. Add 1-2 tablespoons curry powder (2 is spicy) and saute another minute or two. Add vegetables to lentils and broth, and add a 14 oz can of diced tomatoes. The End. :-)
Crystal, I've linked to my FAVORITE recipe using cabbage for Frugal Fridays. Hope you get the chance to try it and enjoy!

Devildogwife: Kroger is one of my favorite places to get good deals. It takes a little bit of practice, but they seem to be the best store all around (at least in this area) for consistently having good deals. Most of their normal prices are more than what I would usually pay, though. I think that part of the reason you can find such good deals is that most all of them have such a great doubling-coupon policy. Ours will take coupons that are a little expired, too. Be sure to check with them to see what their coupon policy is, though, as I've heard it is different in different parts of the country. In certain parts of the country, they also regularly have double dollar coupons - which is about as good as it gets when it comes to getting good deals. :)
Wow, I never would have thought you could buy trial-size products to qualify for ECBs at CVS. Thanks for the tip--I'm definitely gonna try it!
One of my favorite cabbage soups is an recipe I got from a lady at a reenactor at festival. She was taking part in an encampment connected with the 1700's. The food and everything was as authentic as possible.
The soup was a simple mixture of cabbage, new potatoes cut up, and polish sausage. The whole mixture was cooked in chicken broth and seasoned with salt, fresh ground pepper and garlic. Very hearty and smells great, makes a great meal served with cornbread.
Hi, Crystal. I'm new to your blog and love it SO much. Wanted to kick in my 2 cents on the cabbage Q: I add it to beef-veggie soup. I've sauteed it with almonds in butter and olive oil. Also have a great (IMO) salad made with cabbage, chicken, apples, almonds, broccoli, and any other crunchy veggies you want to add. The dressing uses the flavor packet from the pkgs of Ramen noodles that sell for $.20 a piece. Happy to share if you want specifics.
Megan
Cabbage is great just chopped and added into a salad recipe.
I'm sure most people already know about my tip this week, but I wanted to post about it anyway! :)
As usual, thanks for hosting Frugal Fridays, Crystal! :)
Thanks, Crystal, for how much you taught that one day at the mall. I really appreciate it...it's really changed our lives and allowed us to live on less!
Roasted Cabbage - Yummy!
1. Quarter a small head of cabbage, and then halve each quarter.
2. Place cut side up on a shallow pan. Don't put too close together.
3. Drizzle quarters with Extra Virgin Olive oil.
4. Roast in the oven on 375 till brown and carmelized.(20-30 minutes)
5. Sprinkly with Sea salt, pepper and a little fresh parmesan.
Enjoy!
Wow, all these cabbage ideas are great! I don't know which one I will try first!
Crystal- How do I get the Frugal Friday picture to put on my post for next time?
OK, we just had cabbage (that I bought on sale for 19 cents a pound!) for dinner tonight. I sauteed it with apples, and it was SO yummy! Here's how:
Melt 1-2 T. butter in large frying pan. Add peeled, sliced apples (I used 3) and coarsely chopped cabbage (I used about 1/4 of a head). Saute for a few minutes uncovered, then cover and cook until apples and cabbage are soft. We stopped the cooking when the cabbage still had a faint bit of a crunch, since we don't like it soggy or overcooked. This made about 3 servings.
To go with our roast chicken on Sunday I will be making Easy Cabbage Roll Casserole.
1 1/2 lbs ground beef or turkey
2 medium onions, diced
1 clove garlic, minced
1 can tomato sauce (14ish oz, divided)
1 cup water
1 can condensed tomato soup (10 oz)
1/2 cup long grain rice
4 cups shredded cabbage
1. brown beef, onions, garlic an salt, draining of excess fat if you use beef. (I usually add a couple grinds of pepper, and find it usually does not need a lot of salt, so I skip it until at the table)
2. add half tomato sauce, water and half can of tomato soup, mix well.
3. add rice, stirring to combine
4. spray slow cooker with no-stick cooking spray
5. layer half meat mixture, half cabbage, rest of meat mixture, rest of cabbage
6. Mix remaining tomato sauce and soup and pour over top.
Cook on low for 8-10 hours or high for 4-6 hours, until bubbly and heated through.
It will look like a lot but will “shrink” a lot.
We serve this as a main dish or side dish, depending on the need. Leftovers freeze excellently.
Adapted from the original recipe in “Canada’s Best Slow Cooker Recipes” by Donna-Marie Pye, pg 98.
Cabbage..
Our favorite cabbage recipe is in taco salad. We use cabbage as a substitute for expensive (and no nutritional value whatsoever) lettuce and corn chips. It takes the place of both and is super cheap and healthy. Also if you're taking the taco salad to a potluck, it doesn't get soggy like corn chips and doesn't get limpy like lettuce.
Cabbage Apple Salad
walnuts
mayonnaise
pepper
chopped apples
shredded cabbage
shredded carrots
Mix and chill.
We usually pair this with sloppy joes.
God bless your home,
Laurie
Thanks so much for posting the Kroger deals. I had looked over the ad and missed most of these as I hadn't thought to combine them with many of the coupons you mentioned. When I saw your post, I ran out and picked up all kinds of great deals! I plan to put up a photo of my bargains on my blog this afternoon. I'm sure you don't want to do it all the time, but I'd love to see more weekly Kroger tips in the future! Thanks.
In looking at http://recipes.tasteofhome.com today, I found a number of great recipes among which was one for freezer coleslaw. Have not tried it yet but am going to do so. We have a chest freezer so it should work well in it...plus I think it worth a try as not only to do this while cabbage is cheaper, but also to save time and mess later. It does not say how long it can be held there, but did say to defrost it 2 hours before serving.
