Frugal Fridays: Lazy Granola
I think I may have posted this before, but it was a long time ago, so for those who missed it the first time around, here's a very simple and frugal granola recipe that tastes great, too:Lazy Granola*
Mix 1/2 cup each of brown sugar, oil, and honey in a saucepan.
Bring to a low boil.
Add 1 tsp. cinnamon and 2 tsp. vanilla.
Pour over 7 cups of oats in a large pan.
Stir until coated.
Bake at 375 for 10 minutes.
Take out and stir. Put pan back in over, turn off, and go to bed.

This granola recipe looks yummy! I'm going to have to try it. Does it matter which kind of oil you use (canola, olive, et.)?
Take another look at old gift cards in your purse. It's funny how you forget about them and there is still a few dollars left on them. I just now looked at two that haven't been used in quite some time and found out that there is $9.00 left altogether.

Wow, it is amazing how God works in everything. Yesterday I was going through breakfast recipes as I am trying to make nicer, bigger breakfasts for my family, and many of the recipes call for granola cereal. Since I prefer to have everything made from scratch instead of from a box, I knew I would have to search for a recipe. It made me chuckle to see that you posted a recipe for granola this very morning!

The granola recipe sounds great! My husband loves granola, but it's SO expensive! I imagine it's ok to add things like raisins to the oats in your recipe?

Catherine: I'm sure you could add in raisins, nuts, or other such goodies to give it more crunch and flavor. It's a pretty versatile recipe. Not the best granola recipe I've ever had before, but probably the quickest, least expensive, and easiest.
Jenny: Any kind of oil should work, though I'd go with something that is the most healthful. :) You could also experiment with butter or half oil and half butter. Be creative and do what suits your family best is my mantra in cooking and baking!
Oh and I was going to say that this granola is really good atop yogurt. I'm thinking on trying it with a kefir smoothie soon - just as soon as I'm back to baking again. Speaking of kefir, I'm hoping to share about my kefir-making adventures soon.
We add sweetened shredded coconut and chopped almonds to our granola - yum! :)
I'd love to hear about your Kefir making, Crystal! We have a milk cow, so that means lots of milk (!) and we tried making Kefir but just did not like the taste. I'd like to know how you make it, and how you "dress" it up. Maybe I'll be inspried to try it again!

Thanks for this recipe--I usually make granola during the day but it has been too hot here--so I'm making this tonight. (Half old-fashioned oats, half quick.) I've linked.
OK--it turned out pretty well (I like those big chunks!). But next time I would spray the pan first...
Mom just got back from the grocery store (Kroger affiliate) with a great deal. We usually buy a large box of Cinnamon Toast Crunch for our large family, which costs 4.99 (or 5.99 - going from memory). Today, the smaller boxes (usually 2.99) were 3 for 5.00. There was a coupon in one of those nifty coupon dispensers for 1.00 off on 2. Which drops the price to 4.00 for about 16 ounces more. And, finally Krogers is having a deal where a coupon prints at the register for a free gallon of milk when you buy 3 boxes of Gengeral Mills cereal. (The coupons and deals all covered mix and match General Mills.)
