Quick and easy banana bread

Kathrynne and I had fun whipping up a loaf of this banana bread yesterday thanks to the inspiration of some bananas which had worn out their welcome on top of our microwave! :)

This is my favorite banana bread recipe out of many, many different recipes I've tried. It's definitely not the healthiest recipe ever invented, but it sure is yummy! It freezes very well and makes for a great afternoon snack or breakfast on the go.

Quick and Easy Banana Bread - Makes 1 loaf

2 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup oil
1 cup sugar
2 eggs, beaten
4 ripe bananas, mashed
1/2 tsp. vanilla extract
3 Tbsp. milk
Confectioner's sugar (optional, for dusting)

Preheat oven to 350 degrees. Stir flour, soda, baking powder, and salt together. Set aside. Combine oil and sugar in a large bowl. Beat in eggs, banana, vanilla, and milk. Add flour mixture and blend until just combined. Pour into greased loaf pan and bake until toothpick inserted into the center comes out dry - about 1 hour and 10 minutes. Cool in pan 10 minutes and transfer to wire rack. Wrap with plastic wrap and/or foil and refrigerate or freeze. May dust with confectioner's sugar before serving.

Wow! You're already cooking more than the required meals. You're doing much better than I was after any of my children.

The banana bread looks delicious. It is one of our favorites. My 13-year-old always asks for my banana bread as her birthday cake.

Mm, that recipe looks delicious, Crystal! Looks like you had fun baking it! Unfortunately, I'm stuck on an anti-candida diet just now which means I have to avoid sugar! (Boo!). I'm allowed the odd banana though, if they're not over-ripe. It looks so yummy though I might have a go at making it one day with stevia powder instead of sugar, and soya milk in place of the ordinary milk.

Incidentally, I had to get my stevia on eBay as it's mysteriously more or less unavailable in the UK.

Anyway, it's good to see you are feeling better. God is indeed good.

Kathrynne is so precious! She is already changing since Kaitlynn arrived. She looks older. I make this same recipe and it is so good. I've found that the riper the banana, the less sugar I have to use. I actually use 1/2 c. w/ very ripe bananas and it's still yummy. Try some vanilla yogurt on a warm piece of it. It's wonderful! Glad you are feeling better and up to baking!

Hi Crystal,

I made this banana bread yesterday afternoon. It is wonderful! I must have a little smaller size loaf pan, because it looked like I had too much batter for it. It turned out fine in an 8x8 pan. The cooking time was only 45 minutes this way.

Mmmmm, that banana bread looks and sounds scrumptious!! I will definitely have to try some next time I have bananas. :)

I haven't had much commenting time lately, but I have so enjoyed seeing all the pictures of baby Kaitlynn and the rest of your family!! I'm glad you are feeling better and adjusting to life with two little ones. :)

The picture of Kathrynne on this post was so cute. My little Julia has the same dress, and I love it!

I haven't commented before, but decided to do so today!

My family and I always have old bananas waiting to be frozen for smoothies or put in the bin. I saw your recipe here and decided to try it (as we already have a LOT of frozen bananas). It is WONDERFUL - the easiest banana bread I've made and the nicest I've eaten. Thank you so much!

Sadly I forgot that most of my family doesn't like banana bread (even NICE banana bread), so I'm going to try freezing it next!

This "bread" is more like cake. It is sooo good! So much better than a mix from the store. Thanks for sharing the recipe. I wanted to save some, but my husband was home and so, we and the three kids ate ALL of it in one day. I'll have to sneak half of it into the fridge before snacking on it in the future.
