Ritzy Chicken
Here's one of our standby dinners that we use on weeks like this week when the deals at Kroger are sparse, so we only shop at Aldi. It's not the healthiest meal ever, but it is sure delicious and easy to prepare!
Ritzy Chicken
One thing which speeds up dinner preparation for me is cooking up the meat I need for the week ahead of time. This week, we have four dinners planned using chicken, so I boiled enough chicken breasts to last for all four dinners when I made the first dinner that used chicken.
I chop the chicken and then freeze it in meal-size bags. Not only does this save time, but it also stretches the meat farther.

Kathrynne loves to help me put the chicken into baggies.
Ritzy Chicken
1 1/2 rolls Ritz crackers, crushed (I use the Aldi knock-offs - much cheaper and they taste the same to me!)
1 stick butter
2 cups cooked chicken, diced into bite-size pieces
1 cup chicken broth (I use homemade broth.)
1 can cream of chicken soup (or homemade cream of chicken soup)
8 oz. sour cream
Melt butter and mix well with cracker crumbs. Place 2/3 of crushed crackers on bottom of 9x13-inch baking dish. Place chicken over crackers. Pour mixture of broth, soup, and sour cream over chicken. Sprinkle rest of crackers over top. Bake at 350° for 30 minutes.

I have made this several times, it it VERY rich so I usually serve it over rice.

When I make this, I serve it over rice as well. My recipe is called Poppy Chicken and has poppy seeds sprinkled quite liberally over the chicken mixture. Yummy!

Your little Kathrynne (spelling?) is just such a cutie! What a beautiful little girl! You must just love kissing those chubby little cheeks! I found as a mama there is just no way I can wear lipstick, I kiss my kids too much!

A similar recipe is a big favorite in my family. Chicken mixed with 1 can cream of mushroom soup, one can cream of celery soup, and 8 oz. sour cream. Put in the dish. Mix butter with one sleeve of crushed crackers. Sprinkle crackers over chicken mix, then sprinkle liberally with poppy seeds. Bake.
And thank you very much, now I'm jonesing for poppyseed chicken, LOL!
Looks good. If you think it's not so healthy, you could replace the sour cream with lowfat plain yogurt and reduce the butter.
I've made this recipe, too. I add broccoli on top and layer rice on the bottom. It's REALLY good!

My mom makes something like that with poppy seeds. She usually makes enough to fit into two dishs and freezes one for when she doesn't have time to fix something.
This sounds and looks delicious!! Could I per chance make this in the crock pot?

I like to buy chicken in bulk then put in the crock pot with some water and spices. I let it simmer all day, then it easily falls into pieces because it is so tender. It is so flavorful and makes it's own chicken broth right in the pot! Then I put the pieces into baggies to freeze. This makes good chicken sandwiches with cheese and tomatoes slices as well.
We love this recipe too! We do a little twist on it where I use vegetable Ritz instad of plain and the taste is scrumptious! My family loves it.
Crystal I LOVE your idea of cutting the chicken ahead of time, I am going to start doing that!
