Frugal Friday: A simple, healthful, and frugal breakfast recipe
With blueberries in season right now and ripe for the picking, it's pretty easy to find them on great sales. Better yet, you might be able to pick your own at a local farm and get them incredibly reasonable. Here's a good recipe we just made for the first time this week which is simple, healthful, delicious, and uses basic pantry ingredients:
Blueberry Rise 'n' Shine Biscuits
Mix together in a mixing bowl:
2 cups whole wheat flour (can use white flour or half and half, if your family prefers)
1/2 tsp. salt
3 tsp. baking powder
1/4 tsp. baking soda
Cut in with a pastry blender until crumbly:
4 Tbsp. butter (may use shortening, if you prefer)
Add in:
1 cup milk or buttermilk
Stir lightly until combined. Then fold in:
1 cup fresh (or partially-thawed frozen) blueberries
Pat out carefully in a heavily-floured surface to 3/4 inches thick. With a biscuit cutter, cut out biscuits and place them on a buttered baking sheet. Bake at 425 degrees for 10-15 minutes or until lightly golden.
While biscuits are baking, stir together the following ingredients to make a glaze:
1 cup confectioner's sugar
2-4 Tbsp. milk
1/4 tsp. vanilla
Drizzle glaze over biscuits as soon as you pull them out from the oven. Serve piping hot with butter--yum!

Biscuit making is one of the things I still can not do! I have been getting a little bit better but mine still are flat compared to what everyone makes! They look wonderful
Oh my.. those look amazing!! We did go blueberry picking, so we have some in the freezer. This sounds like the perfect Saturday morning breakfast! Thank you and have a wonderful weekend.
Ahhh, I was hoping you'd share this recipe when I saw the picture earlier this week. Thank you!
I'm with Bev. I can't make biscuits either. I need to invest in some good southern flour, I think. Ohio brands are not good for light biscuits at all!
This recipe looks so yummy though. I may give it a try. If they turn out flat, we'll just put ice cream over them... YUM.
You know the one thing that has helped our budget is eating what's in our freezer and pantry. I know that sounds silly but I was buying things "on sale" to "stock up" and never depleting my previous stock! Once I decided I would stop buying things, we had plenty to eat and I saved a ton of money for the summer. We still have several months worth of "stuff" to eat before we need to order another 1/4cow or buy any chickens. Now my grocery bill includes milk, oj, produce and anything we are legitimately "in need" to buy.
I love your blog! I'm adding you to my favorites list today!
I am new at blogging and posted incorrectly the first time to my home page (Growing Great Kids). I re-posted my link directly to my article...feel free to delete the first one!
Thank you for hosting! Have a blessed day!

Hi Crystal, I've enjoyed your last posts! It's really made me stop and think about those meltdown times. The Lord has really been working on me in this area over the last couple of years. But I have regressed... I get tooo busy and have a hard time getting a bath in (yes, I'm showering!). I mean pop on the praise music and relax kind of thing. I used to do it once a week. It gave me extra time to pray, be a girl and get things back in prespective! When I go off my over all schedule ie. summer break, it sometimes throws me for a loop. I appreciate your honesty and understand where you have been. Where I have been and still fall back to on occasion.
There is also a frugal dinner recipe swap over at http://grocerycartchallenge.blogspot.com/ in case you might find it helpful...I know for me it's hard sometimes to come up with something new to cook!
Is the 1/2 TBSP salt correct in the recipe? Just wanted to be sure before making these. Thanks.
Sounds scrumptious. I love fresh blueberries! We are getting creative with some of our meals and eating what we've got - I've been boycotting the grocery store until the end of this month (not really - just don't want to go!). By the time it's all said & done, we'll have made it 3 weeks with no trips. All our fresh veggies are coming from the garden. :)
Cat: Thanks for catching my mistake! That's what I get for typing up the recipe late last night! It's corrected to be 1/2 tsp. Hope no one made it incorrectly and came out with salty biscuits!
I don't have time to do a Friday Post myself this week, but I always enjoy reading yours!
This recipe sounds yummy! It reminds me of blueberry scones. I'm definitely going to make it soon!
Thanks for the recipe! I'll definitely try it.
I love making breakfast. WE have a brinner/brupper every Wednesday to cut down on costs, so I'm always looking for new and yummy recipes. These look divine!! :D
Those look delicious! I haven't found a good deal on blueberries yet.
I linked to my blog, but it was more of a spoof, considering I had a very unfrugal month!

Thank you! My husband LOVES blueberries so I'll have to make these for him! Around here we can get upick berries for $1.25/lb, which is practically a steal (and they're organic). We picked 11 lbs last year and plan more this year!
:D Thanks for hosting this carnival.
We're having blueberry pancakes for dinner tonight!
The best deal I've seen on blueberrries is $2/pint. I'm curious- how much do you pay for blueberries?
Crystal,
I ditto mother hen. Frugal Friday at your blog has become a bit of a cyber carnival for me--I can easily get lost wandering the aisles, if you know what I mean! But I love it. It's a great place to find all kinds of neat ideas from all sorts of people, when I have the time to wander online. I won't be linking today, but I do have a wonderful recipe for Quantity Pancake Mix I'd be happy to share sometime. I figured you'd most likely be interested in knowing the BOOK it came from, since you like to cook healthy dishes with rice and beans and what not. So add this to your TBR pile: 366 Delicious Ways To Cook Rice, Beans, and Grains by Andrea Chesman. Happy reading!

YUM! I just copied you - I made the blueberry biscuits and served them with strawberries. My hubby and I loved them! It was so nice to have something fun and yummy to eat for a quick dinner (I know, it's supposed to be for breakfast :)). Thanks for the recipe!!
Tina
Mmmmmm. Those blueberry biscuits look scrumptious! Can't wait to try them. I just got $3.00 off my blueberries today with another purchase.
Thanks, Crystal!

These were so good. My 3yr old had 3 for breakfast because she loves anything with "blueblerries".
Thanks for the great recipe.
