Frugal Friday: A simple, healthful, and frugal breakfast recipe

With blueberries in season right now and ripe for the picking, it's pretty easy to find them on great sales. Better yet, you might be able to pick your own at a local farm and get them incredibly reasonable.

Here's a good recipe we just made for the first time this week which is simple, healthful, delicious, and uses basic pantry ingredients:

Blueberry Rise 'n' Shine Biscuits

Mix together in a mixing bowl:
2 cups whole wheat flour (can use white flour or half and half, if your family prefers)
1/2 tsp. salt
3 tsp. baking powder
1/4 tsp. baking soda

Cut in with a pastry blender until crumbly:
4 Tbsp. butter (may use shortening, if you prefer)

Add in:
1 cup milk or buttermilk

Stir lightly until combined. Then fold in:
1 cup fresh (or partially-thawed frozen) blueberries

Pat out carefully in a heavily-floured surface to 3/4 inches thick. With a biscuit cutter, cut out biscuits and place them on a buttered baking sheet. Bake at 425 degrees for 10-15 minutes or until lightly golden.

While biscuits are baking, stir together the following ingredients to make a glaze:
1 cup confectioner's sugar
2-4 Tbsp. milk
1/4 tsp. vanilla

Drizzle glaze over biscuits as soon as you pull them out from the oven. Serve piping hot with butter--yum!

Biscuit making is one of the things I still can not do! I have been getting a little bit better but mine still are flat compared to what everyone makes! They look wonderful

I'm with Bev. I can't make biscuits either. I need to invest in some good southern flour, I think. Ohio brands are not good for light biscuits at all!

This recipe looks so yummy though. I may give it a try. If they turn out flat, we'll just put ice cream over them... YUM.

You know the one thing that has helped our budget is eating what's in our freezer and pantry. I know that sounds silly but I was buying things "on sale" to "stock up" and never depleting my previous stock! Once I decided I would stop buying things, we had plenty to eat and I saved a ton of money for the summer. We still have several months worth of "stuff" to eat before we need to order another 1/4cow or buy any chickens. Now my grocery bill includes milk, oj, produce and anything we are legitimately "in need" to buy.

Hi Crystal, I've enjoyed your last posts! It's really made me stop and think about those meltdown times. The Lord has really been working on me in this area over the last couple of years. But I have regressed... I get tooo busy and have a hard time getting a bath in (yes, I'm showering!). I mean pop on the praise music and relax kind of thing. I used to do it once a week. It gave me extra time to pray, be a girl and get things back in prespective! When I go off my over all schedule ie. summer break, it sometimes throws me for a loop. I appreciate your honesty and understand where you have been. Where I have been and still fall back to on occasion.

Sounds scrumptious. I love fresh blueberries! We are getting creative with some of our meals and eating what we've got - I've been boycotting the grocery store until the end of this month (not really - just don't want to go!). By the time it's all said & done, we'll have made it 3 weeks with no trips. All our fresh veggies are coming from the garden. :)

Thank you! My husband LOVES blueberries so I'll have to make these for him! Around here we can get upick berries for $1.25/lb, which is practically a steal (and they're organic). We picked 11 lbs last year and plan more this year!

I ditto mother hen. Frugal Friday at your blog has become a bit of a cyber carnival for me--I can easily get lost wandering the aisles, if you know what I mean! But I love it. YUM! I just copied you - I made the blueberry biscuits and served them with strawberries. My hubby and I loved them! It was so nice to have something fun and yummy to eat for a quick dinner (I know, it's supposed to be for breakfast :)). Thanks for the recipe!!
