Homemade bread sticks

I've been experimenting making homemade bread sticks recently. Yesterday, I made a recipe that is almost a keeper.

I used my homemade pizza crust recipe and rolled it out into a 1/2-inch thick rectangle. Then, I sliced it in 1-inch strips lengthwise and one long cut in half widthwise and brush it with 2 Tbsp. melted butter. I baked these for 10 minutes at 450 degrees and brushed with another 2 Tbsp. butter as soon as these came out of the oven.

They were delicious, soft, and went wonderfully with homemade pizza. Best of all, I just made a double-batch of the dough and used one for pizza crust and one for bread sticks.

My only critique was that they tasted a little salty. Next time, I might try upping the sugar in the recipe to make it a little sweeter.

Now, if only I could figure out a way to replicate Olive Garden's bread sticks, I'd be a really happy camper. Anyone out there have a winner bread stick recipe they'd like to share?

I like to mix in crushed garlic and some seasoning into the butter that I brush on. You can change up the seasoning depending on what you serve it with. I also like to use olive oil and kosher or sea salt sprinkle on top for a change. If I do that I don't use seasoning. But you thought yours was too salty so you may not like that version.

My 'recipe' for cheese sticks goes like this...

2-3 boxes of Jiffy Pizza Mix
Hot Water

Shredded Cheddar Cheese

Mix up the dough and let it sit for a couple of minutes. Then press it into a 9X13 Pan (cookie sheet if you like them thinner.). I usually spritz the top with olive oil...then sprinkle on Cheddar cheese, salt and pepper to taste. Bake at about 400 for 10-12 minutes.

I love these dipped in pizza sauce. MMMMMmmmm.

HOWEVER as cheap and easy as Jiffy Mix is...I will have to try your homemade recipe. It sounds just as easy and quick! LOOKS DIVINE! ;)

Here's how I make breadsticks that we think taste JUST like Olive Garden:

Make your pizza crust recipe, but use olive oil instead of regular oil. Separate the dough into 8 pieces, and roll them out into long strips that look like the size of an Olive Garden breadstick. Place on a baking sheet (I use a Silpat sheet under them so they don't stick) with about 1 inch between each stick and bake at 450 degrees for about 10 minutes or until they are just starting to get a little golden on top (not too long or they will be hard).

When you take them out of the oven, run a stick of butter over the top of each stick and sprinkle lightly (LIGHTLY!) with garlic salt.

I promise you, these are just like Olive Garden. I think the secret is in not putting the butter on until they come out of the oven, it helps them keep shape and be the right texture.

These are my favorites of the ones that I have tried. I have only done it in a bread machine. I cannot remember where I got this recipe to give credit to.

Soft Italian Breadsticks

1 cup water
3 T softened butter
1 1/2 tsp salt
3 cups flour
2 T sugar
1 tsp Italian seasoning
1 tsp garlic powder (or garlic salt)
2 1/4 tsp yeast

Use the dough setting on your bread machine. Add all ingredients in order and start. (If mixing by hand, simply prepare the dough as you normally would.)
After dough is finished, cut in half and divide each half into 12 pieces - roll into a long rope or cut into strips. (I rolled it out and then just used a pizza cutter and cut strips.)
Cover with plastic wrap and let rise for 20 minutes.
Bake at 350 degrees for 15-18 minutes.
Brush with melted butter and sprinkle with Parmesan cheese.

I can give you all of my Olive Garden Recipes. I don't have what you want though. Hope this helps. Danielle

Olive Garden House Dressing
8 ounces Paul Newman's Vinegar and Oil Dressing
1 clove garlic, peeled and minced
1/2 teaspoon Dried basil
1/2 teaspoon Dried oregano
3 packages Sweet and Low −− or
1 tablespoon Sugar
Put ingredients into the bottle of dressing and shake well. Refrigerate 24
hours before using.

Red Lobster Cheese Biscuits
Dough:
1 1/4 lbs. Bisquik
3 Oz. freshly shredded cheddar cheese
11 Oz. cold water
Garlic Spread:
1/2 cup melted butter
1 teas. garlic powder
1/4 teas. salt
1/8 teas. onion powder
1/8 teas. dried parsley
To cold water, add Bisquik and cheese, blending in a mixing bowl.
Mix until dough is firm.
Using a small scoop, place the dough on a baking pan lined with
baking paper. Bake in 375 degree oven for 10 to 12 minutes or until
golden brown. While biscuits bake, combine spread ingredients.
Brush baked biscuits with the garlic topping.

Applebee's Spinach Pizza Appetizer
Pita Bread (2 or 3 whole)
1 − 10 oz. pkg frozen spinach
1/3 cup nutritional yeast
1 med. onion
5 or 6 plum tomatoes
8 Ounce pkg fresh mushrooms
3−4 cloves garlic
1 Teaspoon of each of the following spices:
basil, parsley, cayenne pepper
1/2 to 1 cup rice milk
4 Tablespoon flour
Thaw spinach completely, press out all water. Heat milk in saucepan, when
hot but not boiling stir in flour. Stir until sauce begins to thicken, turn
heat down. Add nutritional yeast and spinach. Stir constantly until thick
and gooey, only about 3−4 min. In separate pan, saute onion, garlic, until
onion is tender. Stir in tomatoes, mushrooms, and spices. Saute until just
done. Preheat oven to 425. Using a very sharp bread knife, split each pita
bread so that you have two round flat pieces instead of one thick one.
Place each piece of bread on a cookie sheet or pizza pan. Spread spinach
sauce over each. Top with tomato mixture, being careful to avoid the juice.
Bake for 5 to 7 min. Watch closely so that the edges of the pita don't
burn.

Ok, I'll stop.

Here's the recipe I use. I got it off Laine's Letters website years and years ago:

http://lainesletters.com/recipe/softfastbread.html

They knock the socks off Olive Garden breadsticks! You don't have to use the bread machine, a mixer with a dough hook will work just as well (or knead them by hand!). I've been making these for years and anyone who tries them absolutely raves over them.

I don't twist the breadsticks like the recipe says. And after they come out of the oven I rub the tops with butter and then sprinkle garlic powder on top of that. The first time I tried this I used garlic salt and they were way too salty. The butter has enough salt in it to give that salty kick. Also, I use all regular unbleached white flour instead of bread flour/whole wheat flour as the recipe states.

Laines Letters has many yummy recipes--her bread recipes are the best!

Mmmm! Those look so yummy! I've tried replicating Pizza Hut's breadsticks at home -- sprinkled grated parmesan cheese, dried basil and oregano, some onion powder, garlic powder and salt on top, brushing with some olive oil first... Delicioso! Especially when you serve them with warmed pizza sauce. :)

I do the same thing using pizza dough. To make it a delicious appetizer or snack, I slather it with butter, parmesan and mozzerela, a little garlic powder and some italian seasoning and bake until golden. They are yummy to dip in pizza sauce.

I second the recipe for the Butter Dips! I've been making these since long before I was married and everyone loves them. You'll find them a bit salty, too, because of their baking in the margarine, but they are so good! I usually use a 13 x 9 pan as it's difficult to get them into anything smaller.

I don't have Olive Garden's breadsticks recipe, but I found these, I don't know how frugal they are at first, but have been working to adapt a few of them to be frugal enough for me to fix, lol. Here's the link

My mom used to work as an office manager for a bakery that supplied Olive Garden's in their state...

I used to replicate their bread by buying the same breadsticks (which were plain) and baking them up then brushing with some melted butter that I had let melt down w/ some cracked garlic (remove garlic afterwards) or in a pinch just melted butter and a tad bit of garlic salt... it helps if you use the best butter you can find... that's one of the times I try to either stop at farmer's market and get the Amish butter they sell or buy the stuff at a whole foods store. Good luck!

Thanks for the recipe ideas! I made homemade pizza and breadsticks with your recipe tonight. They both turned out great! I put some cinnamon and sugar on a few breadsticks, which was a nice dessert. Lo

Sounds yummy. Mmmm butter.

My newest pizza revelation involves using my biscuit recipe (made in food processor- so easy)with a few modifications to make a crisp, thin crust that the kiddos can handle easily. The yeast dough recipes I've tried come out a bit tough and chewey for them.

Check out my blog for the recipe.
